If it’s only for development purposes it’s ok, but please get another licence once you are finished to be able to get automatic updates etc.

Sorry but I’m having trouble understand your problem here, editing the content with the builder seems to work just fine when I try it out. I changed the first header on your front page to demonstrate. Could you try to explain a bit further what you are having trouble with please?
In case you have missed it you edit an element in the builder by hovering it and then clicking the paper/pen (the one furthest to the right) symbol which will be visible when you hover any element.Thanks,

You can set the header behaviour for any page in the Layout menu on the right hand of the edit screen of the page in question.

You will need some customisation to achieve that with Enfold, the amount of work depends on how similar you want your new site to look like the old one. My recommendation though would be to go through the different demos we have: http://kriesi.at/themes/enfold-overview/. You might like something there better than your old design, it will save you a lot of headaches and time.
