The title on your first site displays this:

Is that correct or not? Note that search engine result pages takes a long time to update, so you might have to wait for at least a week to see the changes. The theme won’t override any settings you have done in your SEO plugins. If you want to see what you site actually contains, then you can inspect the source code in your browser, and have a look inside the head tag.

You shouldn’t have to do anything except register your theme license, please refer to this: https://kriesi.at/documentation/enfold/theme-registration/. Make sure to keep a recent backup of your site, and the theme settings can be exported under Enfold->Import/Export.

What you add to your child theme is up to you. If you have added WooCommerce templates to it that needs to be updated, then there’s documentation for that: https://developer.woocommerce.com/docs/how-to-fix-outdated-woocommerce-templates/

There’s nothing in the theme which would cause any files to be deleted automatically. I would recommend that you register your licenses if you haven’t done so already: https://kriesi.at/documentation/enfold/theme-registration/
