Can you please post the link to your website?
You can go to Enfold theme opitons > Header and set header size to “custom pixel value” and change header height. Logo size will automatically adapt

Yes, you can go ahead and update the parent theme. Your content and options are saved on your database and i am assuming, if you have modified any theme files, you have moved them to your child theme.

I unfortunately do not have a chance to check your website on an actual ipad but i checked your website on my iphone and ipadpeek.com but i cannot reproduce the issue. If it is possible for you, can you please check your website on another ipad?

Unfortunately currently it is not possible to preview all available fonts. But you can look up and preview them on http://www.google.com/fonts

Have you tried de-activating all active plugins and check if dragging issue gets resolved? If not, please do so. Also please try switching to one of the default themes and check if drag feature works
