I’m not sure what you are trying to do, are you trying to load content into your custom div from a custom field (using plugin?) to load something from the backend?

If you use the text editor, you could use something like this:
<p style="font-size:50px !important; letter-spacing: 5px !important;"> Your text here </p>You can adjust the value 50 to your liking for the size and the value 5 for the spacing.

I edited the header of the first 1/3 on the home page without any problems, could you try to remove your browser cache to see if that helps?

I don’t think there will be any difference if you hide it or remove it from the actual code, search engines know about your categories already. It will also be easier for yourself if you want to display it in the future, you just have to remove the CSS to display it again.

All you have to do really is to not end the div in first code block and add another codeblock under the content which belong to the corresponding menu item, example:
Let’s say the following is your ALB editing box:
Codeblock element:
<div id="home">The content in the section home
Codeblock element:
</div>The first codeblock starts the div and the last one ends it.

You can remove the alt text itself from the image, but I would advise against it since you will be penalised in regards to SEO.
