We don’t have any best practices for plugins like that, but as far as I know the ones you mention should work with the theme. But having said that, things don’t always work out as expected. You can add the code to the very bottom of function.php, please use a child theme if you are going to make customisations: http://kriesi.at/documentation/enfold/portfolio-item/create-a-child-theme/

I think the easiest option would be to have two separate sections and then show/hide the correct section with CSS. This might help you on your way: http://kriesi.at/documentation/enfold/hide-menu-itemselements-on-mobile/. Let us know if you should need help with CSS.

I know Kriesi is working on it and an update will be available as soon as possible hopefully fixing the Mailchimp issue. Not sure what you mean by being compatible with Yoast but it’s something we strive for of course :-)
