I ask because when I try to check your theme and plugins I don’t get the result I expect, it seems blocked, and while you have reset your site, your menu is not the default, so I’m thinking that the issue of getting a clean demo import is related to an error in your theme files. Since this is a test site with no content, I would recommend deleting and doing a clean install of WP & Enfold. This will ensure you are building on a solid foundation.

This is a core WordPress issue, at WP > Settings > Media > Image sizes you will see the 3 addition images that are created for everyone you upload. I’m not sure if there is a practical way around this as image sizes are served by screen sizes.

Please feel free to request – or vote if already requested – such feature on Enfold feature request form.
As for adding a category for the Portfolio item, while you can change the text though the excerpt, the whole element is linked to the portfolio item, leaving no easy way to change this without editing the theme files. You can leave a feature request for this also or request customization here
