Please change your theme to 2017, try to upload
if that will work ( that means you will upload ) then the issue is on theme, if not then the theme is on us

You have a shortcode around the images from what I can see
That shortcode, if you do not edit there, it does not replace the caption. So instead of edit the image, edit the shortcode text of the caption and that will fix the issue for you.

Yes – there is no way to do that easily.
It would require some custom JS to make it happen which would modify the way things work.
