This is a limitation of the device and not the theme itself. There are possibly a few workarounds that can be found, but unfortunately it goes beyond the scope of support here in the forums.

Yes you can, just use a child theme and follow the instructions here: https://kriesi.at/documentation/enfold/intro-to-layout-builder/#add-elements-to-alb
