this is what the hosting provider wrote and did:

Dear Mr. Beck,
the nginx caching was activated. But this must have been set by you or the account operator as it was configured. I have changed it.
Under the settings for Apache & nginx under the other configurations the Charset was changed:
override_charset on;
charset iso-8859-1;
There are also errors in the logs. I assume this is the reason for the problems. By default the server runs on UTF8.
