Yes, for this there is always validation on the backend too.

If it does not work for you, you might consider using a plugin such as Contact From 7 or some other.

This kind of functionality is not available out of the box. It could be achieved with heavy customizations or the use of some plugin, but it can be difficult.

Well, I tried to set the height or the min-height for all items, but it does not work, the position of each item is calculated and set with the JavaScript and so the height set in css is not respected. There has to be the same amount of text for the rows to be equal.

No, the content and portfolios are stored in the database and they will not be affected. You might want to export theme options but other than that you should be fine.
