There is some nice functionality on the different demo sites that I had questions on.
The first is on the Theme Overview page http://kriesi.at/theme-overview
I wanted to know how to create the filter in the heading which is formatted nicely and has the quantity of items?

That is custom. You can do the same thing with the Masonry element though, http://kriesi.at/themes/enfold/portfolio/masonry-portfolio/.
