Why is it so hard to work with tables in this theme?
Look what I get when I try to make two equal columns. The image is suppose to be 275 x 275

This is more of a default behaviour of HTML tables, what is happening here is that the right column (text) is not being constrained so it ends up using all space available, hence the image size at the left.
One thing you can do is add some break lines to the text in order to reduce it’s width:
