i’ve tried recreating it using the Enfold Child Latest News widget, but the posts don’t show up the same. I couldn’t see anything in the Avia Layout Builder that would build it that way either.

That’s a new element called “Magazine”, you’d need to update your theme to the latest version in order to be able to use it.
