On posts there is that option on dashboard – settings – writing : “Default Post Category”
The point of all this is that I want this category to be set automatically for portfolios created by the customer.

Makes sense.
Having a quick look it cannot be done in a few minutes.
I add it to our dev repo for one of the next releases after 5.6.10, which is planned in the next days.
