New/Edit Portfolio Page does not have a Category Select dropdown

With the latest WP update, there is no longer an option for Category select on the Portfolio page. Create New or Edit — both are missing the Category selection.

I have been changing them on the dashboard list, but I would like to be able to select them on the individual backed portfolio pages.

I have loaded the OPTIONS and these are the only checkboxes available:
