Is it possible to have a masonry set up — similar to the demo: http://kriesi.at/themes/enfold/blog/masonry-blog/ — but with each box position having its own category?
I’m looking to create a Features page with the most recent posts from each category showing in the masonry. That way, it will only show the latest blog post of a specific category in each position. I also want this to display in the flexible masonry format with double-wide or double-tall options.

Try using multiple masonry galleries with each gallery showing only one catogery. Unfortunately it would require quite some time and customization of the theme to achieve this, so I am sorry to tell you that this is not covered by our support. However if its really important for you to get this done, you can always hire a freelancer to do the job for you :)

Okay, I’ve attempted your suggestion but it doesn’t lay out very well in a grid.
Now a new question: can I set up a masonry of blog posts, select a number of specific categories (for example, 9), and have the masonry display the latest post from each of the 9 categories? I’d like to be able to show the most recent post from each category or tag selected.

You can use Masonry Element from Content Elements inside ALB, to achieve that.
