1. Is that possible in the masonry to filter by standard post format. ? (It seems I can only choose from Audio, Gallery, Link, Quote & Video. )
2. If yes is it possible to do this, while maintaining sort options by category ?
What I am trying to do here is have one dedicated page with blog posts (standard post format) and one with Galleries (Gallery post format) Both of the should have sort option by category. Maybe there is another way to do this.

Not currently, it would require more options added to the query parameters. Consider creating a feature request here, https://kriesi.at/support/enfold-feature-requests/, and if it gets enough interest then we may see something get added in a future update.
