I recently finished https://www.emptywheel.net/ for a client – she has over 10,000 posts on her site – on the recommended posts section under each individual post it is pulling from the same tag but it is pulling very old posts. Is it possible to limit the lookback on related posts so it’s only pulling more recent ones?

It is currently not easily possible. Please try using a plugin such as this one – https://wordpress.org/plugins/wordpress-23-related-posts-plugin/
