If on desktop we have left image / right text and below left text / right image and below that left image / right text, it seems correct that on smaller screen sizes that would appear as text/image, text/image, text/image. The default however on smaller screen sizes produces: image/text, text/image, image/text. Can we modify this?

That is expected behaviour and it is not easily possible to switch positions of columns on mobile.
As a workaround, you can turn on custom CSS field for ALB elements ( http://kriesi.at/documentation/enfold/turn-on-custom-css-field-for-all-alb-elements/ ) and add extra text block elements with custom CSS class to your content and hide them on desktop using custom css and show them on mobile.Best regards,
