THis seems like it must be a very simple – but I can’t find a way to do it. I’d like to have a text string on the top of all my pages – a logo would be very long and doesn’t seem to fit. How do I do that?

Add a widget area to your header, http://kriesi.at/documentation/enfold/adding-a-widget-area-to-the-header/, and then drag a text widget to it.
