How do I put a description for gallery pics when working up 1 Page Port Demo?

I imported the files for the Enfold One Page Portfolio demo and I’m trying to work it up into my own site. Right now the demo has 6 items under the Recent Projects section, with no description for any of the items. How would I add a description to the portfolio items that I put in? Also, is there a way to have more than 6 items? I’d like to have at least 12 if possible.

What I’d REALLY like to do is have 9 images titled “Logos, Shirt Designs, Websites, App Development, etc and have them open up into a click through or timed gallery that can display 5-10 items (with the ability to have a description for each one). Anyone know how I’d achieve this or if it’s even possible with the One Page Portfolio demo format?
