I was wondering if there is a way to edit the copyright on the footer to display “copyright (creation year) – (current year)?”

I think the easiest way would be to actually write it out manually? Otherwise you would need to override footer.php with custom PHP.

There are several ways to do this and it is only once in a year the text needs to change. What Rikard suggested is the easiest and safest to just add the year manually in Enfold > Footer options than to add a lot of extra code or plugins.
