You can simply add Masonry element under Content elements in Advanced Layout Builder and choose to display your products.

1. how and actually where is the feature or option for adding these two bottoms to sort the products by price, etc, etc as you have them on http://kriesi.at/themes/enfold/shop/
2. I want to take away the whole gallery at the bottom of http://www.latinomics.org/gipinterns/ I just cannot find where I can deactivate it or even modify it
3. I already have 7 products but they are not displayed in a single slider split them up into X number of lines, I had to add another slider to show them without rolling the slider =/Thanks and best regards,

1) That is the default setup for the WooCommerce store/shop page. This video will walk you through setting up WooCommerce for the first time: https://vimeo.com/channels/aviathemes/77351544
2) It looks like you set that page as the shop page in the WooCommerce settings. There are limitations to what you can do with the plugin and unfortunately that is one of them. You must define the shop in WooCommerce so that the plugin has a page where the default shop content is output.
3) I’m not quite sure what you mean. Can you point us to an example?
