    I just noticed that on Pages and Posts in the sidebar where you select what layout you want it says to go to
    Default Layout – set in Enfold > Layout & Options

    Unless I am drunk there is no Layout & Options in the theme section. What am I missing
    Maybe something is wrong with my install.

    Nice catch :) It should be Enfold theme options under Sidebar tab.
