Is the functionality to build different sidebars on different pages built into Enfold or does this require a plugin? We don’t want the same sidebar on every page, thanks in advance, your support is awesome.

Yes you can build and use different sidebars on different pages,

Yes, you can use different sidebar on each page. You can simply go to Appearance > Widgets and create a new widget area and add your widgets into it and then edit your page and under Layout section you can choose your sidebar – http://i.imgur.com/zuEKJk4.png
