I would like to change the look of archive.php for a few specific categories. Normally, I would just make a new template (category-slug.php). Is that the best way within the Enfold hierarchy, or is there a simpler way to remove the sidebar and the post meta, and make a few style changes?

It’s actually the same with the wordpress template hierarchy if you are using the default editor. I would suggest also using a child theme: http://kriesi.at/documentation/enfold/using-a-child-theme/
