I would like to have an additional filtering using a custom taxonomy. Would it be possible to have ajax sorting similar to that of the Project Categories ?

No, Enfold doesn’t support a sort filter on taxonomy pages but you can create several portfolio grid pages with the layout builder or with the portfolio shortcode.
