It’s actually good to disable lazy loading for elements that affect LCP because lazy loading can delay their appearance. In this case, it’s already handled correctly, so there’s nothing you need to do for this part.

For the fetchpriority issue, if you’re using Image layers in the Layer Slider, go to Layer Settings > Attributes > Custom Attributes tab of the layer, then add fetchpriority as the attribute and set its value to high. The following article should explain what this attribute does.

The page speed reports clearly point to the Revolution Slider as the cause of the LCP issue, so it’s definitely the reason for the decreased score. On the second site, you’ll notice there is no LCP issue because the Revolution Slider only contains static images, without moving parts or animations, unlike the first site, which uses complex slides and effects.

This is the LCP report — note the element sr7-module#SR7_31_1.

Unfortunately, videos in sliders or full-width sections are disabled on mobile devices by default, which is why a fallback image option is available. This fallback image will display on smaller screens in place of the video. If you really need to show the video on mobile view, try using the Layer Slider element. You can add a Video layer and set it as the background. Let us know the result.

Typically updating from v4.x to v7.x should cause no major issues as the theme is backward compatible, but if your child theme has any customized elements, or a header.php or footer.php, these will cause issues, and should be removed first.
Updating via FTP by overwriting the theme files will also cause issues as older files will be left behind, updating by uploading the theme as “new” in the WP backend is safer as WordPress removes the old directory and then adds the new directory.
I have not seen an issue where an update lead to the shortcodes showing (e.g. [av_textblock]), do you see the shortcodes on the frontend or in the backend in the Block Editor? Pages & Posts created with the ALB (Advanced Layout Builder) should not be opened, edited, or saved with the Block Editor, always edit ALB pages with the ALB editor. Also don’t use any other builders like elementor, beaver builder, visual composer, etc.
Incremental updates is not needed as I have seen v3.x updated without issues. I recommend exporting your child theme settings for backup, and exporting the layerslider sildes. Then create a staging site to test the update on, this way your live site is unchanged while your issue can be examined. Ensure that your stagging site is not using a cache plugin or object-oriented cache from your server, or a CDN, as these may not show the updated site correctly.

What you are looking to do will likely yield unexpected results, but you can copy the shortcodes of the layerslider by activating debug mode under Enfold->Layout Builder->Show advanced options.

If your widgets don’t have any content, then they will be populated automatically by the theme.

We can now see the video and can confirm that the scroll animations in the old site can be recreated with Enfold. You can apply these animations to Column elements, and they should be automatically triggered on scroll. You can also utilize the Layer Slider plugin, which is natively included in the theme, to create hero sections or sliders.

Are you hosted on OVH? This is a known issue with demo imports on that specific provider. We have manually imported the content of the 2017 demo, including the theme options. Unfortunately, the images and the layer slider failed to import. You can now start editing the pages and replace the missing images with your own.
