Apologies that you are having these issues. How did you do the theme re-installation? If you haven’t done it this way already I suggest to delete all theme files before installing a fresh copy from your themeforest account via FTP.

You can edit the header via the Enfold > Header Options tab. You edit the menu via the menu link.

Add the following to quick css. You already have some !important; declarations in there looks like so the below may not work. If you already have some custom css for the menu, please remove it.

Not if you are using a child theme. If you are using a child theme your updates will be safe.

The instructions on the link you sent seem fairly accurate and universal. I would suggest making a full back-up of your install and attempting to follow theme.

You would first need the page-id if its for a specific page. Also, you would need to know exactly what elements you want to change an then tailor the css to focus on just that area.
