Just to be clear, as I agree I don’t think we have a good idea of what you are trying to do, you want the header image to take up the entire background of the header all the way down to mobile but also not be cropped?
Its not ideal but how you have it right now is about as close as you can get since that doesn’t really work without shrinking the available background image area to be displayed in the header.
This will help to tweak things for better visibility by adding a background on the nav menu between tablets and large destops:
@media only screen and (min-width: 769px) and (max-width: 1139px){ #header_main_alternate { background: #000; } }
I don’t know what is causing the mobile nav menu to be failing right now so for that you would need to try deactivating all active plugins, doing a quick re-install/update of the theme to make sure you are back to a working baseline.

For this demo homepage http://kriesi.at/themes/enfold/homepage/home-v7-one-page-portfolio/ the slideshow is the fullscreen slideshow element instead of the LayerSlider slideshow.
There is also the themes fullwidth slideshow which might also be what you are looking for.
When you are using a LayerSlider slideshow all of the responsivness is handled entirely by the LayerSlider plugin and your individual settings for that slideshow so it doesn’t have as fine of controls or output.

You can generate the shortcodes you want to add into the section on another page and then paste them into the text area for that accordion. Most of the content based elements will work fine but I know some users have had issues with more advanced layouts since Kriesi has not officially added them into being available for true nested shortcodes yet.

You need to update to the version that was just released and that has the new hotspot element. You are on version 2.8.1 which doesn’t have it.

You have the background image on that slider set to be aligned to the top left of its container. So you just need to change its alignment in the options for that slider to top and center or center center.

Its one of the new options available on the single page editor in the Layout meta box on the right hand side. Look for:
Activate Header transparency If checked the header will be transparent and once the user scrolls down it will fade in.
Then select the transparent and glassy header option from the dropdown.

Try using the actual youtube video url instead of the short link version. The lightbox code doesn’t automatically pick up the youtu.be links as videos.

Otherwise your best route would be a freelance web developer who can customize the output to be fully built into the element.

Our support queue has been a bit high over this weekend (when we are normally slower anyway because of the weekend).
The button isn’t scaling because the padding is defining its size in addition to the font. Since you have them explicitly in your css you also need to have the padding and font adjusted in a new media query for whatever breakpoint you want.

In the custom.css file of the theme files (in the css folder) I added a desktop and tablet+mobile one you can add your css to or use them as a reference/guide.

Thats the first I’ve heard of the menu not working on an iOS device. I’ve tagged another of the support crew as I don’t have an iPhone handy to test your site with to see if it might be something specific on your installation.

Where is it happening for you specifically? I just tried creating a new page and the regular editor shows up fine on my end.
If you accidentally saved a page when viewing the default editor and not the Advanced Layout editor view it would write over the previous drag and drop editor content since the two can’t exist on a page at once.
If you do a result autosave or restore backup on those pages you should be able to get the data and content back.

For the fullscreen slider there isn’t any way to add additional elements on top of it.
You can have a color section with an image or video background which can then have elements on top of it: https://vimeo.com/channels/aviathemes/86284134
And you can set the minimum height on it to 100% which gives it the fullscreen sizing but not the fullscreen slideshow unfortunately.

If you also had a header.php in your child theme you’ll need to update that file to use the new header.php of the parent and then make your customization to the new header.php file.

You can try using this plugin to see what image sizes are set and then regenerating the images: http://wordpress.org/extend/plugins/simple-image-sizes/

If you were having success with the previous script I would suggest turning off the new one from the theme options and then including in the old prettyPhoto via one of the plugins that uses it instead.
Eg: https://wordpress.org/plugins/prettyphoto/ or one of the others if you want more features.

Your css to change the font targets *only* paragraph tags so that is all that gets changed. Instead you can target content wrapper so everything inside of it gets that default font:
.entry-content-wrapper { font-family: 'Josefin Slab'; }
Or for sitewide:
body { font-family: 'Josefin Slab'; }
