If they come back, when you login, it is most probably because of the cache been cleared.
That does happen sometimes, it is how servers cache the loged in users.Please try to verify that, when you maintain the issue.

The theme files will be replaced, so if there is any modification in files ( not on options settings ), then those will be lost.

If it does, it is either something with any plugin that is active or your hosting provider.
In any case, the hosting provider support, could notify you for any issues, through the error_log.Please contact them and they will do help you solve it.

That depends on many things and at the moment, the mobile support for those editors is not possible ( as many WordPress features are also not possible in some cases ).

It is possible with some CSS or a combination with some JS also ( for been displayed properly everywhere ), but you would need to hire someone who will be able to assist you with that issue.

I have loaded the web site and seems that the font is not been loaded properly at all.
Can you please recheck the loading and that the registration is been done properly?That is why it loads the fallback at the fonts.

If you go to Appearance -> Menu, you select the menu you have as main and then, from the accordion at the left, pick the Categories and after ALL, so you can see all of them and pick the one it matches your style.
