We want all our blog posts to display in a /blog/ directory. I’ve tried several different possible solutions and have yet to find anything that will work

You can create a page called Blog and with the permalink /blog/, then use the Blog Posts element on that page.

we’ve set up the default blog page but what we are looking for is for each blog post to be listed in the .com/blog/ subdirectory

So you are looking to have URLs like http://your.site/blog/blog-post?
If so then please have a look at creating a custom structure under Settings->Permalinks.

I tried different things within the Settings –> Permalinks and it will only let me choose from the structure tags, won’t allow me to specify /blog/
message received: “Error: A structure tag is required when using custom permalinks.”
I was trying to just put /blog/ in the custom structure and needed to put /blog/%postname%/
Just posting for others to see the fix

This actually is a general WordPress issue and not really theme related, you might want to use a plugin for custom permalinks and/or address this question to WordPress forums.
