I am not certain how best to describe this but here goes:
What I want to do is have an image with a text overlay and when a person hovers over that box the color changes (text stays the same). I would have each box link to a different page if a person clicks on it. Is this something I can do within Enfold or is there a Plugin that allows me to accomplish this? Basically exactly like what happens with the four boxes found in the Enfold Shop Demo – http://kriesi.at/themes/enfold-shop/ but linking to pages and not products.

The element on the demo you linked to is the Grid Row element, could you try that out please? We can give you the shortcodes for if want to import it directly into the builder.

I do have grid row there with 4 boxes. See http://beta.mbiflorida.com/. Is there no way to have it one color before a person hovers and then change to another color after they hover?

What you are seeing in the demo is the Caption Overlay Opacity applied to a color image. So it looks black and white before hover and color after. In you case, if you upload color images for your 4 boxes you would have the same effect. You can also change the Opacity color which is set to black by default in the Image element > caption tab, scroll down to the Caption Overlay Background Color. You can choose a different color for each one. Please see Private Content area for a screenshot.
