I’ve disabled the sidebar from showing in Enfold -> Sidebar, but it’s still showing on the mobile version of my site on all pages.

Am I correct in understanding that the menu on your mobile screenshot is the “problem”? If so, this is not your sidebar. This is your mobile menu. :)
You can change Mobile Menu settings at Enfold > Header > Mobile Menu. You can activate it for smartphones only, or for smartphones and tablets. Also, if you wish, you can hide the Mobile Menu Submenu Items so that it looks cleaner. Visitors will need to tap on your parent item to see submenu items.

The problem is that the mobile menu is showing up as a side bar on page load, and not when someone clicks the mobile menu icon.
The screenshot you saw (http://itsholly.com/enfold/fmitk-mobile.PNG) is what the page looks like on my iPhone 7+ immediately after the page loads – the page scrolls horizontally and the navigation is visible *without* clicking the Menu icon. Once I click the menu icon, the sidebar where the mobile navigation disappears and the page appears as it should. I’m assuming this is just a bug somewhere or some funky CSS and not just an option I can change.
