I have been trying to add a countdown using the theme shortcode [av_countdown date='January 11, 2017' hour='17' minute='0' min='3' max='4' align='av-align-center' size='' style='av-default-style'] in a text widget to the sidebar on my site with no success.
Any assistance would be great!

You can enable debugging mode to see shortcodes you have created in pages using Advanced Layout Builder – http://kriesi.at/documentation/enfold/enable-advanced-layout-builder-debug/
Or, You can switch to Default Editor and click on Magic Wand to see full list of shortcodes http://i.imgur.com/n4KXkdm.jpg
then you can create any of them and copy/paste shortcode into any other content element or into text widget.If that still does not help, please create a temporary admin login and post it here privately.

You are currently using an older version of the theme. Please update Enfold to the latest version 3.8 – http://kriesi.at/documentation/enfold/updating-your-theme-files/ and flush browser cache and refresh your page a few times – http://wiki.scratch.mit.edu/wiki/Hard_Refresh
