Hello,
I want to create a text expander just something like this example.

Click on the plus icon to expand the text. Is there something similar also in the enfold theme or what setting do i have to use.

Please try using Accordion element under Content Elements of Advanced Layout Builder. Examples can be seen here – http://kriesi.at/themes/enfold/shortcodes/toggles-accordions/
