I am wondering if it is possible to do the following:
1. To change the defaults of the content elements in the Avia Layout Builder. Specifically the separator/whitespace.
2. To change the defaults of the sidebar settings on a post.

I’m not sure what you mean by changing the defaults? You can change the values yourself in the element options on for instance the Separator/White Space element. You can also set different sidebars for different pages/posts, please try to be a bit more specific on what you are trying to achieve.

What I mean is when you choose separator/white the default is a line. So each time I use this I have to go and change it to whitespace. If I could change the default to be white space then it would be doing what I want without having to go fix it.
As to the sidebar settings what I am talking about is the layout settings. Where you can add a custom sidebar, choose which side its on, and the footer and header settings. When I am doing a blog post I use the same settings every time. They are not the default ones. I thought if I could change what the defaults are then each time I create a post I would not have to go and enter that I want a right sidebar, that I want a custom menu, that I want the title and footer a certain way.

that would require a heavy customization of the theme, which is out of our support scope. However, I think it could be done and you could find someone here.
