Is there a way to add thumbnails in the Ajax Portfolio Slideshow so they appear below the large image, the same way that they do in the Ajax Portfolio Gallery option? (It seems that without the thumbnails below on the slideshow, the way it is functions now, a user might miss that there is more than one image, if they are quickly clicking the controls in the upper right to go to the next portfolio item.)

No, not currently. You will need to use the gallery preview.
If you’d like then request this feature here, https://kriesi.at/support/enfold-feature-requests/, and we may see something get added in a future update.
