What action is required to have a responsive header including a logo and a responsive slider which adapts to android and mac devices?

Responsive layout should be enabled by default. If not, you can always enable it in Enfold theme options.

responsive layout is activated but still the layer slider and the header (with logo) does not adjust to the respective devices (e.g. smartphone).

I already made some changes so if I replace/upload only the single files which have been changed to the former version it should not impact my current content….correct?!

Your content is saved on your database, so no, it will not impact your content. But if you have modified theme files and not using a child theme, you are going to lose those changes. Please see – http://kriesi.at/documentation/enfold/portfolio-item/create-a-child-theme/
