So suppose I have two categories: clients and products for different portfolio entries, can I have:
website.com/clients/client-1
website.com/clients/client-2
website.com/products/product-1
website.com/products/product-2

No, this is not possible at the moment. You can change the slug but you can’t use a variable (like category, month, etc.).

The reason behind wanting a variable was because I initially wanted to use pages instead of portfolio items, but I couldn’t see how to easily create a grid with thumbnails just like what a gallery does.
If there’s a way to easily create a gallery-like grid with thumbnails that point to pages, that would negate my need for portfolio items and work around the slug limitation.

Yes – you could use the “Partner/Logo Element” which enables you to add an unlimited number of images to a grid and you can link these images to different websites or pages.
