Using post types as testimonials or other dynamic testimonials options

What is the best way to be ability to have testimonials update dynamically. What I mean is that I would like to be able to add testimonials and tag them according to project or category so that I can display them dynamically across my site and not have to go module to module in order to change, update or add testimonials.
