At the moment it displays ‘Blog – (name of category)’ in my header. Anyway to change the ‘blog’ to something else?

You can change the name of the page from Blog to ‘something else’ and it will be changed in breadcrumbs as well

You should firstly create a page named “something” then in Enfold theme options you should choose that page as the page you would like to display your blog posts http://i.imgur.com/qHmxlMg.jpg
