I need to build my blog posts using the default editor, and I would like to use some CUSTOM ELEMEMTS.
I cannot see a shortcode in the “INSERT THEME SHORTCODE” drop-down.

Please try to enable debug mode in order to see Layout Builder shortcodes: https://kriesi.at/documentation/enfold/intro-to-advanced-layout-builder/#debug-mode. After that you should be able to copy the shortcodes in question into your blog posts. Note that you will have to do this manually.
