When I change “Select Your Editor” from “Use Block Editor” to “Use Classic” the Yoast SEO fields don’t show.

I can’t reproduce that problem on my local installation. Please send us a temporary WordPress admin login and login URL so that we can have a closer look. You can post the details in the Private Content section of your reply.
