Hi I would like to purchase this theme but i’m relatively new to wordpress. Is there a way to choose the contruction demo as my layout when I purchase? or would I have to create it from scratch?

Yes, all demos here: https://kriesi.at/themes/enfold-overview/ are included with the theme and you can import them to use them as a starting point for your website.
