Yes it is possible using couple of elements. Examples can be seen here – http://kriesi.at/themes/enfold/portfolio/masonry-portfolio/ and http://kriesi.at/themes/enfold/portfolio/. Please edit the element you use to display portfolio posts and choose to make it sortable.

It is not easily possible as browsers do not really support changing these colors via CSS. Please see – http://stackoverflow.com/questions/2402146/html-select-selected-option-background-color-css-style
