The code should be place in functions.php not the functions-enfold.php and this code will not work in this case, to add the read more here you need to edit the enfold/config-templatebuilder/avia-shortcodes/contentslider/contentslider.php file since this is the element that is used to generate this page at the moment.

The feature was not implemented to have the tracking off, since just showing you’re doing and have an option to opt out is the level of the implementation that meets the requirements. Here a reply from Kriesi
from what we gathered in our research its not necessary and therefore was not added. everyone who is doing google tracking has a legitimate interest to do so for reasons of site improvement, analyzing your visitor demographic, etc
If you got legitimate interest in doing something this is usually enough to do it, as long as you disclose what you are doing in the privacy policy.
