This can be done in Enfold, but it would require targeting each specific menu-item in via css and assigning its unique color.

Yes, this is if you have the burger menu activated on the desktop as well. In that case hover works as it should. However, since there is no hover state on mobile devices the effect is not achieved.

If you are familiar with javascript or jquery this may be possible with an if statement. Essentially you would want a function that states if the image is not of a certain id or class then hide the caption.

Did you add to the very top of quick css so it runs first? Also clear the cache a few times over. Also, in order to shift elements you have to use some type of margin or padding.

Yes, place one column under the other. If you want them side by side on desktop that is fine, but in the case of mobile you would be better stacking them. This could be accomplished using media queries.
